Ketosis is a metabolic state in which our body uses fats and ketones instead of glucose (i.e. sugar) as the main driving force. Glucose is stored in our liver and released only when there is an increased energy demand. However, if we stop supplying carbohydrates or do so in a minimal amount for several days, our liver's glucose stores will be depleted.

Of course, the liver can process glucose from the amino acids contained in the protein (this process is called gluconeogenesis) - but it will not do it in quantities large enough to meet the needs of our brain, which, after all, needs a constant energy supply. Fortunately, ketosis is a kind of alternative energy for our organs.

In the state of ketosis, our body produces ketone bodies at an increased speed, using for this purpose the fat that we consume and the one that is formed in our body in the form of adipose tissue. Ketone bodies can be divided into three types: BHB, i.e. 3-hydroxybutyric acid, acetoacetate and acetone (which is really the result of the spontaneous decarboxylation of acetoacetate).

When the ketones in the blood reach a certain threshold value, we can say that nutritional ketosis has been achieved. According to the reliable and recent opinions of Dr. Steve Phinney and Dr. Jeff Volek, diet ketosis begins at the threshold of 0.5mm / L, or about 9mg / dL, where the unit of measurement is blood ketones.

In addition to providing the necessary substances for proper functioning, ketone bodies - in particular BHB - can contribute to the alleviation of inflammation and prevent oxidative stress, which is two basic factors guilty of chronic diseases. These are undeniably two desirable symptoms of ketosis.
