Method of preparation:
- We start with the leavening! Pour 100 ml of warm water into a large bowl, add the yeast and 1 teaspoon of sweet syrup (such as maple or agave), and stir vigorously to combine the ingredients.
- After about 2 minutes, add our pizza flour mixture to the leavening mixture.
- Mix the dough with a mixer on low speed until the ingredients are evenly combined.
- Add the olive oil and knead until the dough forms a smooth and elastic ball.
- Cover the bowl with a clean cloth and let the dough rise in a warm, quiet place for about 30-60 minutes. The pizza dough should increase in volume by about 50%!
- Preheat the oven to 220°C, turning on the thermo function. Transfer the risen dough to a baking sheet greased with olive oil and spread it evenly with your hand or roll it out. A round baking tray with a diameter of 26-28 cm will be ideal.
- Prick the top of the bottom with a fork so that the pizza bottom bakes evenly. Put the dough in the oven and bake for about 10 minutes, until the edges are beautifully browned.
- If necessary, you can extend the baking time.
- Take out the baked dough, brush it with sauce, add your favorite ingredients and put it back in the oven for another 5 minutes.
