Organic millet flour tastes mild and faintly nutty. At 4ecoshop it has its own shelf, kept apart from the groats made from the same grain. The 500 g packs are milled in Poland and go into bread, cakes, pancakes and waffles, or into soups as a thickener. Read on for the blend, the label and the storage that keeps this flour in good shape!
Millet gives a gentle, slightly nutty flavour, without the earthy edge that buckwheat brings to a loaf. Each pack lists one ingredient and nothing else, so no second flour sharpens or softens that taste. In bread and cakes the mildness stays in the background and lets the filling lead.
Millet flour pancakes come out soft, and waffles behave the same way. The same neutrality helps when you thicken a soup or a sauce – the flour disappears into the dish rather than taking it over.
Millet as a grain contains no gluten. The declaration printed on a pack is a separate matter and depends on the mill, on what else is ground there and on the traces that carry over. NaturaVena states it in the product name, which makes that gluten-free millet flour the pack for a strict diet.
Bio Planet carries the organic certificate, and its label warns that the product may contain cereals containing gluten, peanuts, soy and sesame seeds. The same NaturaVena pack sits on two shelves: the millet flour one and our gluten-free flour section. Each product card runs in two language versions, and the ingredient and allergen panel can be read in whichever one you open.
Millet belongs in a gluten-free recipe as part of a blend, not as the whole flour weight. Measure out a share small enough to leave the structure of the dough unchanged, then raise it in the next bake if the crumb holds. The product cards pair it with buckwheat, maize and rice flour, and that is the combination to try first for bread, cakes or pasta.
What it brings to a mix is a soft, moist crumb. The nutrition panels are close as well: 357 kcal per 100 g for the NaturaVena pack and 344 kcal for the Bio Planet one. Protein sits at 11 g in both, with fibre at 1.9 g and 1.4 g.
Groats are the hulled whole grain. Flour is the same grain ground to powder, and that one step decides what each of them can do. Groats swell in water and keep their shape, which is what makes them work as porridge or as a side dish. Ground millet has no grain structure left, so it belongs in batter and dough.
Swapping one for the other in a recipe does not work, and a cake written for flour will not rise on groats. Bio Planet packs both forms of the same organic millet. The hulled grain comes in 400 g and 500 g bags in our healthy groats section, which also covers buckwheat, bulgur, couscous and semolina.
Keep it dry and cool in a sealed container, and the mild flavour will hold through a season of baking.
