Alce Nero semolina pasta is the perfect substitute for ordinary wheat flour pasta. Semolina, or durum wheat flour, contains many more nutrients, vitamins and minerals than regular white flour. It is rich in B vitamins, iron, zinc, as well as large amounts of protein - semolina products are therefore recommended for athletes and people on a reduction diet. Semolina pasta is also characterized by a lower glycemic index, so it can be used by people with insulin resistance.
