What organic flours does BioLife offer?
BioLife keeps the range deliberately narrow: five flours in wheat, rye and spelt, all of them organic. Light wheat type 550 is the everyday choice, an organic wheat flour for rolls, pancakes and white loaves, while organic spelt flour comes in two grades, light 550 and bread-grade 750.
Rye covers the darker end. Rye bread flour type 720 suits lighter rye loaves and a first sourdough, and wholemeal rye flour type 2000 keeps the whole grain, so it belongs with the rest of our wholegrain flour.
How to choose the right flour type for baking?
Pick the grain first, then the number. Wheat gives the mildest crumb, spelt a nuttier flavour and a softer dough that dislikes over-kneading, rye the dense, moist loaf sourdough bakers want.
Every BioLife flour is milled from wheat, rye or spelt, so none of them suits a gluten-free diet. Spelt catches people out, because it is a variety of wheat. Baking for someone with coeliac disease means shopping our gluten-free flour category instead.
Type 550, 720 and 2000 explained
The number is an ash grading, a measure of the mineral matter left after testing, so the higher the number, the less refined the flour. Type 550 is light and pale, types 720 and 750 sit in the middle as bread flours, and type 2000 is wholemeal rye with the bran left in.
The scale is Polish, so it does not translate one to one into British plain and strong bread flour. Read it as a refinement cue, then let the grain and your recipe decide the rest.
What makes BioLife flour organic?
Organic describes how the grain was grown and checked, not how the flour tastes or performs. In Great Britain the word is regulated: anything sold as organic comes from certified suppliers and holds at least 95% organic agricultural ingredients, with the certifier named on the label.
