Krokus – preserves, pickles and sauces

Half of this shelf explains itself and half needs a translation: jams, ketchups and mustards sit beside grated horseradish, beetroot with horseradish and a sauerkraut salad. The Krokus range we stock also runs to fruit syrups, vegetable spreads and red cabbage, and every jam names its sugar in the title. It suits cooks who want a short ingredients list on the jar that finishes a plate. Spread one of the no-sugar jams on toast and work outwards from there!

What does Krokus offer?

The savoury end holds two mustards and two ketchups, one mustard coarsely ground and spicy, one of each made with no sugar. Grated horseradish and two vegetable spreads sit beside them on our healthy sauces shelf.

The sweet side is longer: seven jams from strawberry with vanilla to rhubarb with cinnamon, three fruit syrups in blackcurrant, strawberry and blueberry, a tomato cream soup with a pumpkin one beside it, and two cabbage jars.

Which products are sugar-free or gluten-free?

Gluten-free covers exactly two items here: the pumpkin cream soup and the pepper and dried tomatoes spread. Nothing else in the range carries that marking.

Sugar is handled in the names rather than in a badge, which is why two jars of jam standing side by side can read differently. One brand does not mean one set of labels, and the front of each jar settles it.

Traditional preserves and fermented foods

Sauerkraut, red cabbage and beetroot with horseradish

Sauerkraut is cabbage preserved with salt until it turns sour, and our jar is a sauerkraut salad, already dressed. It eats sharp, salty and crisp beside sausage or a baked potato, and red cabbage comes in a 500 g jar of its own.

Grated horseradish and beetroot with horseradish make a pair. The plain 180 g jar is the sharper of the two, heat you measure in half teaspoons, and the 280 g beetroot version takes that edge off.

How to use Krokus sauces and preserves

None of this asks you to cook differently: the spicy mustard goes into a dressing, the French one suits a cheese board, and the mild ketchup handles a plate of chips. Both bottles sit in our organic ketchup section, though neither carries an organic mark of its own.

Which Krokus products are sugar-free?

The French mustard, one of the two ketchups and the pumpkin spread say no sugar on the front, and three of the seven jams do the same. Those are product names rather than legal thresholds, so the figure on the back panel is what settles a comparison.

Is the ketchup gluten-free?

Neither ketchup carries a gluten-free marking, so the bottle in your hand answers this one. In sauces grain arrives through the vinegar or a seasoning blend rather than the tomatoes, which is why the label matters more than the recipe you picture.

What is beetroot with horseradish?

It is a deep red, spoonable relish of cooked beetroot with grated horseradish worked through it, sold in a 280 g jar. The colour travels, so a small spoon on the side is a sensible first serving.

How long do the preserves keep once opened?

Once a jar is open it belongs in the fridge, and the period to work to is printed on that pack. A clean spoon and a closed lid do the rest.
