Restocking a gluten-free or keto kitchen usually means orders in more than one shop, and the Pięć Przemian shelf we stock is put together to shorten that list. The Polish brand runs from gluten-free flour and baking mixes to seeds, organic spices, salts, pastes and erythritol. Bakers avoiding wheat and cooks counting carbohydrates end up on the same shelf. Baking takes the largest share of the range. Ready mixes for bread, rolls, pizza, dumplings and cookies sit alongside oat flour, a universal mix and the raising agents that go with them.

Pięć Przemian is a Polish brand founded in 2010, and its name translates as five transformations. The kitchen reading is simple: five flavours balanced in one dish, with five spice as the clearest example on the shelf.
Start with the pack, because each mix carries its own water, yeast and baking time. Some are complete and need only water, others ask for yeast or oil, and gluten-free dough runs wetter than a wheat one, so a spatula does more of the shaping. The first loaf from a bread mix shows how it behaves in your oven, and the second is usually the one you write down.
Selected lines are, and the ones that are stay that way only as long as the kitchen around them does. If you bake for someone with coeliac disease at home, a separate sieve, board and tin matter as much as the mix.
The quickest to use are the pistachio paste and the almond and chocolate cream, which go straight onto a spoon or a slice. The keto bread mix needs an oven and a tin, while erythritol comes as its own 1 kg pack for whatever you sweeten alongside.
Pięć Przemian labels it keto friendly, and the figures behind that marker are printed on the pack. Erythritol is a polyol sweetener used in place of sugar, so the practical question is quantity, and the pack directions answer it.
Weigh rather than scoop, because a gluten-free baking mix is balanced by weight and a cup of one is not a cup of another. A tin of the right size does the rest, which is why two baking tins sit on the same shelf as the mixes.
