Preparation
1.     Scald tomatoes with boiling water, peel and dice.
2.     Sauté onion and garlic in olive oil, add tomatoes and spices.
3.     Cook over low heat for 45–60 minutes, stirring occasionally.
4.     Remove bay leaves, blend until smooth.
5.     Strain the finished ketchup through a sieve if you want a velvety consistency.
6.     Pour into sterilized jars. Store in the fridge for up to 2 weeks, or pasteurize.
