What is clarified butter?

Clarified butter is the fat that stays behind once butter has been melted and stripped of its water and its milk solids. The 240 g jar of ghee we stock carries exactly that on its label: 100% milk fat from clarified butter, 100 g of fat per 100 g, of which 60 g are saturates, and zero carbohydrate, sugar, protein and salt.

Clarifying butter runs through four stages:

  1. Melting: the butter is warmed gently until it settles into layers.

  3. Separation: the milk solids drop to the bottom of the pan while a light foam gathers on top.
